This is one of my favorite any time meals whether it be breakfast, lunch or for a midday snack. Super quick and easy to make, minimal mess, vegetarian and actually quite filling! Here’s what you’ll need:
Avocado Burrata Toast
Ingredients
- Sourdough Bread (or your preference of bread)
- 1/2 of an Avocado
- Tomato to slice (I prefer Heirloom but again to your preference)
- Burrata Cheese ( I use Distefano’s, the best, freshest, straight up restaurant style burrata I’ve found yet)
- Olive Oil
- Balsamic Glaze
- Lemon
- Salt
- Pepper
- Basil (Optional)
- Chili Flakes (Optional)
Directions
- First, you’ll want to put your bread in the toaster and toast to your liking. While the bread is toasting half your avocado, remove the pit and slice into thin slices.
- Once out of the toaster lay your toast on to the plate and lay avocado slices along the bread so that it’s covered. Here I like to drizzle a little bit of lemon juice, olive oil and salt on the avocado. I use the back of a fork to apply a little pressure to mix the oil and lemon into the avocado. I personally don’t like to mash it like guacamole but that’s totally up to you if you do!
- Slice your tomato and lay the slices down to cover the avocado. I like to add a little salt and pepper to the tomato to liven it up.
- Now my favorite part, take a spoon and scoop out that glorious burrata and lay it right on top of those tomatoes. Too much is never enough for me.
- Next, drizzle the top with olive oil and balsamic glaze.
- Optional step: Take leaves of basil, I like to roll them up long ways (like a burrito) and take my knife to cut strips for garnish (plus it’s delicious) and sprinkle those on top.
- Serve with fork and knife and voila! Delicious anytime meal.
